Spanish Sausage Omelette

Lyn bought a pack of mixed Spanish Sausage while shopping and thought it would make a great omelette… and she was correct, we added a few more extra ingredients to add some more flavour. We had this one as an evening meal with some home-made chips. Start with the basic omelette then add the following ingredients before folding over and leaving to finish cooking for a few minutes.
Ingredients
- Bacon
- Mixed Spanish sausage
- Asparagus
- Mushrooms
- Danish Blue Cheese
- Extra Mature Cheddar
- Soft Garlic & Herb Cheese
Cook all the sausages, onions and mushrooms before preparing the base omelette. Make your omelette then add the ingredients to one half and continue to cook for a couple of minutes before folding the omelette over then leaving to sit for a further couple of minutes. Once the omelette is cooked simply serve and enjoy.
