I love fajitas so it made sense to make a Chicken Fajita Omelette.  It is basically the exact same as a fajita but instead of being wrapped in a flour tortilla its wrapped in a yummy omelette.

Ingredients

• Chicken
• Spice Mix for Original Smoky BBQ Fajitas
• Red Peppers
• BBQ Sauce
• Sour Cream

Cook the chicken in some hot oil along with the spice mix. Once the chicken is nearly done add the chopped peppers, and colour it’s your omelette. Make your basic omelette recipe and once the egg is still runny on top add the BBQ chicken, peppers then cover in BBQ Sauce.  After you have added the ingredients fold the omelette and leave it for a couple of minutes.  Once the omelette is cooked simply top with the sour cream, serve and enjoy… we had fries with this one and it was a very tasty evening meal.
